Cranberry Brie Bites

Ingredients
  

Rosemary Spiced Pecans
  • 1 1/4 cups pecan halves
  • 1 1/2 tbsp Spice Islands Rosemary
  • 1/2 tsp Spice Islands Cayenne Pepper (more or less to taste)
  • 1 tsp brown sugar
  • 1 pinch kosher salt
  • 1/2 tbsp unsalted butter, melted
Brie Bites
  • 1 roll crescent sheet
  • 4 oz brie, cut into 24 cubes
  • 1/2 cup canned whole cranberry sauce

Method
 

Rosemary Spiced Pecans
  1. Preheat oven to 350º F. Line a baking sheet with parchment.
  2. In a small bowl, whisk together the brown sugar, salt, rosemary, cayenne, salt, and melted butter. Add the pecans and toss to combine until everything is coated.
  3. Pour the pecans onto the prepared baking sheet and arrange so they do not overlap. Bake 8 - 10 minutes, or until toasted. Set aside.
Brie Bites
  1. Preheat oven to 375º F.
  2. Roll out the crescent sheet and cut into 24 equal size squares.
  3. Press each crescent square into a mini muffin tin.
  4. Spoon 1 teaspoon of cranberry sauce into the dough and top with a brie chunk.
  5. Bake for 10 - 12 minutes, until pastry is browned and cheese is bubbly.
  6. Remove from oven, top with a rosemary spiced pecan and serve.
