Chicken Pesto Panini

Ingredients
  

  • 2 slices bakery bread - Sourdough, Italian, 5-grain, etc
  • 1 tbsp pesto
  • 2 tbsp roasted red pepper - roughly chopped
  • 3 oz rotisserie chicken - cut into bite-sized chunks
  • 2 slices Galbani® Fresh Mozzarella Cheese

Method
 

  1. Spread the pesto on one slice of bread and top with the chopped chicken, roasted red pepper and two sliced of mozzarella. Top with the second slice of bread
  2. Pre-heat your panini press spray with cooking spray then cook the sandwich for 4 - 6 minutes, until golden. NOTE: You can also cook the sandwich on a grill pan. Spray with cooking spray and cook the sandwich for 2 -3 minutes per side or until golden.
