Brown the ground beef and chopped onion in a large skillet over medium-high heat. Drain any excess grease.
Stir in the softened cream cheese, ketchup, mustard, mayonnaise and pickle relish.
Stir in 1 1/2 cups of Cabot Seriously Sharp Cheddar
Season with salt and pepper to taste.
Top with the remaining shredded cheese and place under the broiler to melt the cheese.
Add any additional toppings (pickle chips, diced tomatoes, chopped bacon, and diced red onion).
Serve with chips, crackers or sliced baguette.
