Carrot Cake Cream of Wheat

Ingredients
  

Cereal
  • 1-1/4 cups milk
  • 3 tbsp Cream of Wheat® Original Hot Cereal
  • 1/4 cup grated carrot
  • pinch salt
  • 1/2 tsp cinnamon
  • 1 tbsp brown sugar
  • 1 tbsp pecan, chopped
  • 1 tbsp shredded coconut
  • raisins, if desired
Cream Cheese Icing
  • 1 tbsp cream cheese, softened
  • 1 tsp powdered sugar
  • 1/2 tsp milk, or as needed to achieve preferred consistency

Method
 

  1. Bring milk to a boil. Watch carefully to prevent the milk from boiling over.
  2. Gradually add Cream of Wheat, stirring constantly with wire whisk until well blended. 
  3. Return to a boil. Reduce heat to low; simmer, uncovered, 1-1/2 minutes, stirring frequently.
  4. Add the cinnamon, salt, brown sugar, grated carrot, shredded coconut, chopped pecans and raisins and cook another minute, until thickened. Cool slightly.
  5. Top with the cream cheese icing and additional pecans, if desired.
