Method
- Bring milk to a boil. Watch carefully to prevent the milk from boiling over.
- Gradually add Cream of Wheat, stirring constantly with wire whisk until well blended.
- Return to a boil. Reduce heat to low; simmer, uncovered, 1-1/2 minutes, stirring frequently.
- Add the cinnamon, salt, brown sugar, grated carrot, shredded coconut, chopped pecans and raisins and cook another minute, until thickened. Cool slightly.
- Top with the cream cheese icing and additional pecans, if desired.
