Caramelized Onion Hummus

Ingredients
  

HUMMUS
  • 1/4 cup fresh lemon juice
  • 1/4 cup tahini
  • 1 tbsp Knorr Zero Salt Bouillon
  • 2 tbsp extra virgin olive oil + additional for serving
  • 15 oz can of chickpeas - drained and rinsed
  • 1 - 2 tbsp water - if needed
CARAMELIZED ONIONS
  • 2 - 3 large onions - sliced
  • 1 tbsp olive oil
  • 1 tbsp Knorr Zero Salt Bouillon

Method
 

CARAMELIZED ONIONS
  1. Heat the olive oil in a large skillet over medium high heat.
  2. Add the onions and cook over medium heat for 10 minutes, stirring often.
  3. Sprinkle the onions with 1 tablespoon of Knorr Zero Salt Bouillon and stir to coat.
  4. Reduce heat to medium low and cook the onions for 30 minutes to 1 hour, stirring every few minutes to prevent sticking and burning.
  5. Once the onions are caramelized, remove from pan to a bowl and allow to cool.
HUMMUS
  1. Add the tahini and lemon juice to the bowl of your food processor and blend for 1 minute, until whipped and creamy.
  2. Add the olive oil, Knorr Zero Salt Bouillon and garlic and process for an additional 30 seconds.
  3. Add half of the chickpeas and process for 1 minute.
  4. Scrape the sides, add the remaining chickpeas and process for 1 - 2 minutes, or until smooth and creamy.
  5. Add water if needed to thin the hummus and help create smooth, creamy hummus.
  6. Spoon the hummus into a bowl, create a well and spoon the caramelized onions over the hummus Drizzle with olive oil if desired. Serve and enjoy!
