Heat a skillet over medium high heat and brown the sausage, crumbing as you cook.
Add the Mahatma Rice to the skillet and stir fry for 2 - 3 minutes, until heated through.
Push the rice/sausage mixture to one side of the pan. Add the chili oil to the other side of the pan then add the beaten eggs. Scramble the eggs then mix them into the rice mixture.
Stir in the soy sauce and red pepper flakes and cook for another minute.
Serve topped with a fried egg, chopped green onions and a drizzle of hot sauce.
