BLT Pimento Cheese Sandwich

Ingredients
  

Pimento Cheese
  • 8 oz cheddar cheese - shredded
  • 4 oz cream cheese
  • 1/2 - 3/4 cup Hellmann's Mayonnaise
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 4 oz pimentos - drained
  • salt & pepper - to taste
Sandwich
  • 8 slices bread
  • 8 slices of cooked bacon
  • 4 - 8 lettuce leaves
  • 2 tomatoes - sliced
  • Hellmann's Mayonnaise - if desired

Method
 

Pimento Cheese
  1. Combine all ingredients in a bowl and mix to combine. Refrigerate until needed.
Sandwich
  1. Spread some of the prepared Pimento Cheese onto a slice of bread. Top with 2 slices of bacon, lettuce and tomato slices.
  2. Spread additional Hellmann's Mayonnaise, if desired, before adding the additional slice of bread on top.
