Blackberry Chipotle BBQ Pork

Ingredients
  

  • 2 tsp olive oil
  • 1 small shallot - chopped
  • 1 clove garlic - chopped
  • 1 Tbsp. chipotle chilies in adobo - seeds removed and chopped
  • 6 oz blackberries
  • 1/4 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1 tsp. salt

Method
 

Chipotle BBQ Sauce
  1. Heat oil in a medium saucepan over medium-high heat and cook shallots 2 minutes, until soft and translucent.
  2. Add garlic and cook 1 minute.
  3. Stir in chipotle chilies and cook 1 minute, stirring constantly.
  4. Add blackberries, vinegar, sugar and salt, stir until blended. Bring to a boil, stirring frequently. Simmer for 20 minutes until thickened.
  5. Pour through a fine mesh strainer using a spatula to mash and push the sauce through.
Pork
  1. Heat the grill to medium high. Place the pork on the grill and cook for 12 minutes per side.
  2. Baste the pork with the prepared BBQ sauce and cook another 2 minutes per side until the thickest part of the pork reaches 145°F (63°C).
  3. Let rest for 5 minutes and serve with the remaining BBQ sauce.
