Chipotle BBQ Sauce
- Heat oil in a medium saucepan over medium-high heat and cook shallots 2 minutes, until soft and translucent.
- Add garlic and cook 1 minute.
- Stir in chipotle chilies and cook 1 minute, stirring constantly.
- Add blackberries, vinegar, sugar and salt, stir until blended. Bring to a boil, stirring frequently. Simmer for 20 minutes until thickened.
- Pour through a fine mesh strainer using a spatula to mash and push the sauce through.
Pork
- Heat the grill to medium high. Place the pork on the grill and cook for 12 minutes per side.
- Baste the pork with the prepared BBQ sauce and cook another 2 minutes per side until the thickest part of the pork reaches 145°F (63°C).
- Let rest for 5 minutes and serve with the remaining BBQ sauce.
