Beer Cheese Soup

Ingredients
  

  • 4 slices bacon
  • 2 tbsp butter
  • 1 small onion, chopped
  • 1/4 cup flour
  • 1 1/2 tsp ground mustard
  • 1/2 tsp cayenne pepper
  • 2 cups vegetable broth
  • 12 oz beer
  • 1 tsp Worcestershire Sauce
  • 2 cups half & half
  • 10 oz VELVEETA® Original Cheese, cut into 1/2-inch cubes
  • KING’S HAWAIIAN® Soft Pretzel Bites

Method
 

  1. In a large pot, cook the bacon until crisp. Remove bacon to a paper lined plate and crumble to serve with soup. Reserve 2 tbsp of the bacon drippings in the pot.
  2. Add the butter and onion to the drippings and cook for 3 - 5 minutes, until the onion is soft and translucent.
  3. Stir in the flour, ground mustard and cayenne pepper and cook for 2 -3 minutes, stirring continuously (mixture will be thick).
  4. Gradually add the vegetable broth, stirring continuously.
  5. Stir in the beer, Worcestershire sauce and half & half.
  6. Bring the soup to a boil then reduce heat to a simmer and cook for 12 minutes.
  7. Add the VELVEETA® to the soup and stir continuously until melted and creamy.
  8. Spoon in the soup into bowls and top with the crumbled bacon and serve with KING’S HAWAIIAN® Soft Pretzel Bites.

Notes

NOTE: the onions will add texture to the soup. If you prefer a completely smooth soup, use an immersion blender before serving.
