Method
- In a large pot, cook the bacon until crisp. Remove bacon to a paper lined plate and crumble to serve with soup. Reserve 2 tbsp of the bacon drippings in the pot.
- Add the butter and onion to the drippings and cook for 3 - 5 minutes, until the onion is soft and translucent.
- Stir in the flour, ground mustard and cayenne pepper and cook for 2 -3 minutes, stirring continuously (mixture will be thick).
- Gradually add the vegetable broth, stirring continuously.
- Stir in the beer, Worcestershire sauce and half & half.
- Bring the soup to a boil then reduce heat to a simmer and cook for 12 minutes.
- Add the VELVEETA® to the soup and stir continuously until melted and creamy.
- Spoon in the soup into bowls and top with the crumbled bacon and serve with KING’S HAWAIIAN® Soft Pretzel Bites.
Notes
NOTE: the onions will add texture to the soup. If you prefer a completely smooth soup, use an immersion blender before serving.
