Pumpkin Scones

Ingredients
  

  • 2 1/4 cups cups all-purpose flour
  • 1/4 cup brown sugar
  • 1 tbsp baking powder
  • 1 tbsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 8 tbsp very COLD butter, grated or cut into small cubes
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla
  • 2/3 cup Califia Farms Pumpkin Spice Creamer + extra for brushing

Instructions
 

  • Preheat the oven to 400º F.
  • Mix the flour, brown sugar, baking powder, pumpkin pie spice, cinnamon and salt together in a large bowl.
  • Use a pastry cutter (or a couple of forks) to cut the COLD butter into the dry ingredients, just until pea sized crumbs form.
  • Make a hole or well in the center of the mixture and add ¾ cup of Califia Farms Pumpkin Spice Creamer and vanilla and mix just until everything is incorporated. You should be able to squeeze the dough together. If too crumbly, add a little more creamer and mix. DO NOT OVER WORK THE DOUGH.
  • Move the dough to a lightly floured surface and shape into a rectangle that is 12"x3" in size.
  • Carefully cut the rectangle into 8 equal sized triangles.
  • Place on a parchment lined sheet pan and brush the tops of the scones lightly with creamer.
  • Bake for 17 - 18 minutes or until golden brown.
