Easy Ham Fried Rice

Ingredients
  

  • 2 tbsp vegetable oil
  • 1/2 cup frozen peas
  • 1/2 cup carrots - peeled and chopped
  • 2 - 3 green onions - chopped
  • 2 eggs - beaten
  • 8 oz Hatfield Ham Steak - chopped
  • 3 cups cold cooked rice
  • 1/4 cup teriyaki sauce
  • salt & pepper - to taste

Instructions
 

  • Heat 2 tablespoon of oil in a non-stick skillet or wok and add the ham, peas, carrots, green onion and egg and sauté until the eggs are cooked.
  • Add the rice to the pan and stir fry until heated through and the rice begins to crisp about 3 – 5 minutes.
  • Add the teriyaki sauce and toss to combine. Remove from heat and season with salt and pepper to taste. Serve with additional green onions if desired.
