Pumpkin Cake

Ingredients
  

PUMPKIN CAKE

  • 2 cups all-purpose flour 
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tbsp pumpkin pie spice
  • 1 cup oil - vegetable or canola
  • 4 large eggs
  • 1 - 1/2 tsp vanilla extract
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar - packed
  • 15 oz canned pumpkin

FROSTING

  • 8 oz cream cheese - softened
  • 8 tbsp butter - softened
  • pinch salt
  • 3 - 1/2 cups confectioners sugar
  • 1 tsp vanilla extract

Instructions
 

Pumpkin Cake

  • Preheat oven to 350º and spray an EZ Foil pan with cooking spray.
  • In a large bowl, add the all-purpose flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice and whisk to combine.
  • In another large bowl, add the oil, eggs, vanilla, granulated sugar, brown sugar and canned pumpkin and whisk to combine.
  • Pour the wet ingredients into the dry ingredients and mix until combined.
  • Pour the mixture into the prepared pan and bake for 30 - 35 minutes, until inserted toothpick comes out clean.
  • Allow to cool completely before frosting.

Cream Cheese Frosting

  • Place the cream cheese and butter in a large bowl or the bowl of your stand mixer and beat on high until creamy.
  • Add the confectioners sugar, salt and vanilla and beat on low until the sugar is moistened. Then beat on high for 3 minutes, until smooth and creamy. NOTE: Add additional sugar as needed to get to your desired consistency.
  • Spread the frosting on your cooled cake, slice and serve!
