2-Ingredient Flatbread

Ingredients
  

  • 1 3/4 cups SELF RISING Flour
  • 1 cup siggi’s Icelandic style skyr

Method
 

  1. Add siggi’s Icelandic style skyr and the flour to a medium bowl and mix with a wooden spoon or rubber spatula until a ball begins to form.
  2. Pour the dough onto a lightly floured surface and knead for 1 - 2 minutes then shape into a round disc.
  3. Divide the dough into 8 portions and roll each portion into a ball.
  4. Lightly flour your work surface and use a rolling pin to roll out each portion into thin rounds (approximately 1/8" thick).
  5. Heat a non-stick pan over high heat (no oil needed).
  6. Place one flatbread in the pan and cook for 1 - 2 minutes. The flatbread will puff and brown. Flip to the other side and allow to cook another 1 - 2 minutes, until it puffs and gets brown patches. Repeat with the remaining pieces, wrapping the cooked flatbreads in a tea towel as they are done.
