Hummus Burgers with Quick Pickles

Ingredients
  

QUICK PICKLES

  • 1 cup cucumbers - sliced very thin
  • 1/2 cup red onion - sliced very thin
  • 1/2 cup rice wine vinegar
  • 1/4 cup water
  • 2 tbsp sugar - or to taste
  • 1 tsp salt - or to taste
  • 1/2 tbsp red pepper flakes - or to taste

BURGERS

  • 1 lb lean ground beef
  • 1/4 cup HOPE Sea Salt & Olive Oil Hummus + additional for serving
  • 1/4 tsp black pepper
  • 4 buns - halved and toasted

Instructions
 

QUICK PICKLES

  • In a jar with a tight fitting lid, add the vinegar, water, sugar, salt and red pepper flakes. Stir until the sugar/salt has dissolved.
  • Add the sliced cucumbers and onions, seal and refrigerate until chilled.

BURGERS

  • Place the beef, hummus and pepper in a large bowl and gently mix with your hands just until combined. Form into 4 patties.
  • Grill the burgers over medium high heat, turning once until cooked to your preferred temperature. Approximately 6 - 8 minutes for medium doneness.
  • Spread 2 tablespoons of hummus onto the toasted bun and top with a burger patty. Add the desired amount of pickles and onions and any additional toppings followed by the top bun.
  • Serve and enjoy!
