Caramelized Onion Hummus

Ingredients
  

HUMMUS

  • 1/4 cup fresh lemon juice
  • 1/4 cup tahini
  • 1 tbsp Knorr Zero Salt Bouillon
  • 2 tbsp extra virgin olive oil + additional for serving
  • 15 oz can of chickpeas - drained and rinsed
  • 1 - 2 tbsp water - if needed

CARAMELIZED ONIONS

  • 2 - 3 large onions - sliced
  • 1 tbsp olive oil
  • 1 tbsp Knorr Zero Salt Bouillon

CARAMELIZED ONIONS

  • Heat the olive oil in a large skillet over medium high heat.
  • Add the onions and cook over medium heat for 10 minutes, stirring often.
  • Sprinkle the onions with 1 tablespoon of Knorr Zero Salt Bouillon and stir to coat.
  • Reduce heat to medium low and cook the onions for 30 minutes to 1 hour, stirring every few minutes to prevent sticking and burning.
  • Once the onions are caramelized, remove from pan to a bowl and allow to cool.

HUMMUS

  • Add the tahini and lemon juice to the bowl of your food processor and blend for 1 minute, until whipped and creamy.
  • Add the olive oil, Knorr Zero Salt Bouillon and garlic and process for an additional 30 seconds.
  • Add half of the chickpeas and process for 1 minute.
  • Scrape the sides, add the remaining chickpeas and process for 1 - 2 minutes, or until smooth and creamy.
  • Add water if needed to thin the hummus and help create smooth, creamy hummus.
  • Spoon the hummus into a bowl, create a well and spoon the caramelized onions over the hummus Drizzle with olive oil if desired. Serve and enjoy!
