I thought I’d share one of the most AMAZING mac & cheese versions that I have ever had. I made this with my mom a few weeks back and we were both blown away at how delicious it was. It’s rich, creamy and packed with huge flavor. I have actually made it twice since that first batch and will likely make it again later this week. Next time, I am going to toss in some grilled chicken to make it a complete meal for my carnivores –hahaha!

You gotta try this recipe. It’s such a tasty spin on mac & cheese…I hope you guys like it as much as we do!

Lemon and Rosemary Mac and Cheese

Serves: 6
Ingredients
  • 16 oz Ronzoni® Large Elbows
  • 1/4 cup butter, divided
  • 2 large shallots, sliced
  • 2 Tbsp fresh rosemary, finely chopped
  • 2 cloves garlic, minced
  • 1 cup 35% heavy cream
  • 1 Tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • 6 oz brick-style cream cheese, cut into cubes
  • ⅔ cup Parmesan cheese, grated
  • 3 Tbsp lemon juice
  • 2 Tbsp lemon zest, divided
  • ⅓ cup bread crumbs
Instructions
  1. Preheat oven to 400˚F. Cook pasta according to package directions; drain reserving ⅓ cup pasta water.
  2. Meanwhile, melt 2 Tbsp butter in large saucepan set over medium heat. Cook shallot, rosemary and garlic for 3 to 5 minutes or until tender.
  3. Stir in cream; bring to a boil. Reduce heat to medium-low. Cook, stirring constantly, for 5 to 8 minutes or until reduced slightly. Stir in mustard, salt and pepper. Reduce heat to low. Whisk in cream cheese until smooth and creamy.
  4. Toss in pasta, pasta water, Parmesan cheese, lemon juice and half the lemon zest.
  5. Meanwhile melt remaining butter in small skillet set over medium heat. Toss in bread crumbs. Cook for 3 to 5 minutes or until golden and toasted. Sprinkle toasted bread crumb mixture before serving.
