Sausage, Feta & Spinach Frittata

Prep Time 5 minutes
Cook Time 15 minutes
Servings: 6
Course: Breakfast

Ingredients
  

  • 1 tbsp butter
  • 2 cups fresh baby spinach
  • 1 package Jones Dairy Farm Golden Brown Sausage Links
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400º F.
  2. In a bowl, whisk together eggs, milk, salt, and pepper. Set aside.
  3. In an oven-safe skillet, heat butter over medium heat. Add the spinach and sauté until just wilted.
  4. Pour the egg mixture over the cooked spinach, add the sausage links then sprinkle evenly with feta cheese.
  5. Let it sit on the stovetop for 2–3 minutes until the edges are set. Transfer the skillet to a preheated oven for 9 - 10 minutes until set.
  6. Top with chili oil or hot sauce then slice and serve.
