Ten Minute Tequila Lime Shrimp

Ingredients
  • 1 pkg (8.8 oz) Mahatma® Cilantro Limón Flavored Jasmine Rice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lb shrimp, peeled and deveined
  • 2 ounces of tequila
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 jalapeno, sliced
  • cilantro, for garnish
Instructions
  1. Prepare rice according to package directions, set aside.
  2. Heat the oil in a skillet over medium hight heat.
  3. Add garlic and jalapeño and cook for about one minute.
  4. Add the shrimp and cook for 2 – 3 minutes, just until they begin to turn pink.
  5. Stir in the tequila and lime juice and cook an additional 2 minutes or until shrimp is cooked through.
  6. Season with salt and pepper to taste and serve over the Mahatma® Cilantro Limón Flavored Jasmine Rice.
  7. Garnish with cilantro, if desired.
