Menu Plan 5/20 – What’s For Dinner?

It’s a grilling kind of week. Now that baseball is over we have a little more free time in the evenings and I don’t have to worry so much about throwing food in everyone and running out the door. I actually have a big Boston Butt on the Big Green Egg right now in preparation for dinner tonight – I can hardly wait!
The pork will then be used to whip up a delicious Cuban sandwich for Thursday. Gotta love cooking once and eating twice!
Luckily my husband enjoys working the grill so I will just do the prep and the sides for many of the meals this week!

This week I am cooking from the fridge, freezer and pantry. I need to use up some of my food before I start thinking about shopping. The Memorial Day ad is usually a good one, so I may just see if I can hold off until then. I have plenty on hand to geed my crew….here’s what the plan is this week.

Menu Plan 5/7 – What’s For Dinner?

This week I get a bit extra break from the kitchen. In my opinion, Mother’s Day should be celebrated for at least a week. Since my guys won’t go for that…I do milk it a bit and take the weekend off. I think it’s only fair that I get the whole weekend to relax and let someone else cater to me a bit.
We’ll probably take my mom out on Saturday and hopefully my guys have something planned for me on Sunday. Fingers crossed that involves flowers and some kind of chocolate

Menu Plan 4/30 – What’s For Dinner?

It’s another busy week so my menu had to work with the chaos. I decided a bunch of easy meals was the only way to survive this week.
I think I am most excited about Sunday dinner. I will share some recipes with you guys later this week. You know Mexican food is one of my most favorite things. Cinco de Mayo is a great excuse for me to cook up a bunch of my favorite foods and yell “¡Olé!” – tee hee!

Menu Plan 4/23 – What’s For Dinner?
April 23, 2013
The weather is so nice right now about the only thing I want to do is fire up the grill. The majority of my meals are out on the grill this week. I decided that I am also going to have my husband fire up the Big Green Egg and smoke up a big pork tenderloin this weekend. Unless we have guests, I should have some leftovers to use next week.
I need to work on a adding a few meal ideas that can be taken and eaten on the go. We keep running into issues where we have multiple activities in one night. I am finding it too difficult to go back and forth with the kids and need something we can eat between activities. We go from 2 carpool lines directly to swim lessons and then have a few minutes before we dash to the ball park for a game. By the time we get home it’s after 8 pm. Running back home for a meal is just out of the question. I have a couple of Subway gift cards so I am giving myself a break this week. I will have to come up with some other ideas (and ball park food is out of the question!!)
So–if you guys have any ideas, let me know! I am definitely open to suggestions other than PB&J

Menu Plan 4/16 – What’s For Dinner?

We ate out a good bit last week and now I am ready for some good food…my good food
I am trying to get back into the swing of things after being out of town for a few days. I guess I was a bit off my schedule as I totally forgot to take out some meat yesterday. Luckily I always have some quick go to dishes that I can throw together in a pinch. Yesterday it was a boxed jambalaya. Not exactly gourmet but it was quick, easy and filled everyone’s belly!
I chose all the meals this week except Friday’s meal. My husband put in a request for some hot wings. I have my fingers crossed that I have some in the freezer otherwise I guess those will be on my shopping list this week.

Menu Plan 4/8 – What’s For Dinner?
April 9, 2013
Well guys it’s been an eventful few days. I mentioned in my weekly totals last week that my oldest had been sick. Well, the stomach bug ended up spreading a bit. My little one got sick on Saturday night. The worst part is that he started up while we were out of town visiting my husband’s brother. It’s just not fun being sick – especially when you are in someone else’s home! The icing on the cake was that after cleaning up vomit for days I also got hit with that dang stomach bug and spent Sunday night running back and forth from the bed to the bathroom…ugh!
Since everyone has been under the weather, I haven’t been really thinking about food. Last night, I gave myself a break and threw a Boston Butt Roast in the crockpot. It will be two meals this week and I’ll have leftovers that will get tossed in the freezer for another day. The boys are on Spring Break this week and we have plans to head up to Chattanooga for a long weekend….so I only have a few days of dinners planned. I’m planning on making a soup base that will be Chicken & Dumplings on Wednesday and then I will turn the leftovers into a quick Chicken Noodle Soup when we get back home on Sunday.

Menu Plan 4/2 – What’s For Dinner
April 2, 2013
I am ready for the weather to stay nice so I can give my grill a workout! Grilling means that I have fewer dishes to clean and I can even usually talk my husband into cooking while I do the side dishes.
So, half of my meals this week will all be done on the grill provided the weather cooperates. I am also trying a few new recipes this week. Hopefully the meatballs and the chicken roll-ups will be successful. I wouldn’t mind adding a few more recipes to my meal rotation.

Menu Plan 3/26 – What’s For Dinner?
March 26, 2013
It’s another busy week here at my house. The only night we don’t have to throw down dinner and rush to an activity is tonight. I will actually be able to make dinner and we can sit, relax and eat in peace. All of the other nights are quite hectic, so I will depend on meals that I can prep early in the day so it will be ready when I need it.
My family will be headed over to my house for Easter dinner. I debating on which mac & cheese recipe to make. I listed my all time favorite mac & cheese recipe below but also have a decent crockpot option that will save me a little bit of time. We’ll have a great meal then head outside to find eggs. I am hoping the weather cooperates so we can spend a good part of the afternoon outside.

I am still working off my stockpile and trying to use up items that I have in my freezer and my pantry. I have been pretty successful using the items I have on hand. I have been craving baked fish so I threw that on the menu. While I would love a big piece of sea bass, I have a bunch of tilapia in my freezer that needs to be cooked – so it will have to do!
