Since Valentine’s Day falls on a Monday this year we will likely celebrate at home. We have so much going on this weekend with my son’s birthday party that I am guessing that we probably will have to forego a night out and just have a nice family Valentine’s Day dinner That works just fine for me and I will happily tuck away my entertainment funds for another splurge down the road…when the timing is better

Amanda over at A Few Short Cuts has our weekly meal deal. Once again she has a recipe for a dish I have never had – Cuban Stuffed Potato Casserole.
This sounds so good and would be a perfect recipe to double so that you can eat one and freeze one to use later. I bet most of you have everything on hand to whip this one up –making this one a great deal!

Amanda over at A Few Short Cuts has our weekly meal deal. I had to laugh a little at the comment Amanda made in the email she sent with the recipe. She said this was not a dish she would normally make. I was very excited to read the recipe as this is a dish I would (and will) totally make-it sounds delicious!
Today she has Spicy Peanut Chicken on the menu! If I had not forgot fresh ginger when I was shopping earlier this week I would have everything I need. You definitely have to go check this one out. The best part is that you can make this for about $1.50 per serving…I’d say that is definitely a meal DEAL!

I am a huge fan of quick and easy meals…especially ones that I can have on the table in 30 minutes for about $2 per person
The great part about this dish is that it is versatile. You can serve it over pasta, rice in a salad or just about anyway you like! Amanda decided to serve it over pasta with a salad. Head over and check it out!

The ingredient list just sounds so unique and delicious.Maple syrup, pecans with chicken in a crockpot…not something I would have ever come up with but oh my I think it sounds great!! I love to try new recipes and this one is going on my menu for next week!!
This is a quick and easy meal and it is easy on the wallet! Amanda estimates that you can make this one for about $2.37 per serving! I am sure most of you can make it for less as you will have some things on hand!

Amanda over at A Few Short Cuts has our weekly meal deal ready. I am so excited about this one…it is almost like Amanda came up with this just for me – Cheesy Chicken Empanadas.
You see I had planned to make chicken pot pie for dinner tonight. Last night I went ahead and cooked my chicken and it is ready and diced in the refrigerator. I have a bunch of pie crusts and so I just figured I would do the old stand by pot pie. Then this great recipe arrived in my inbox!!
I am so excited to try a new recipe and you guys know I can’t turn down anything that has a mexican flair! The great thing about this is that I will be able to make plenty for tonight and enough to freeze for later!! I know I will be very happy about this on a night when I am just exhausted!
