Tuscan Herb Pork With Mushroom Sauce

Ingredients
  

  • 1 Hatfield Tuscan Herb Pork Tenderloin
  • 4 tbsp butter - divided
  • 1 tbsp olive oil
  • 8 oz mushrooms - sliced
  • 2 cloves garlic
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme
  • 2 cups beef broth
  • 1 tbsp heavy cream

Instructions
 

  • Cook the Hatfield Pork according to package instructions.
  • While the pork cooks, prepare the sauce by adding 2 tablespoons of butter and 1 tablespoon of olive oil to a large skillet.
  • Melt the butter then add the mushrooms and cook for 4 - 6 minutes, until softened and beginning to brown.
  • Add the garlic and cook and additional 1 - 2 minutes, until fragrant. Remove to a bowl and set aside.
  • In the same pan, melt the remaining 2 tablespoons of butter and then add the flour. Cook for 2 minutes, stirring constantly.
  • Add the beef broth and stir. The sauce should thicken pretty quickly.
  • Add the salt, pepper, thyme and the cooked mushrooms to the sauce.
  • Stir in the heavy cream and remove from heat.
  • Slice the pork and serve with the prepared mushroom sauce.
