Cook the Hatfield Pork according to package instructions.
While the pork cooks, prepare the sauce by adding 2 tablespoons of butter and 1 tablespoon of olive oil to a large skillet.
Melt the butter then add the mushrooms and cook for 4 - 6 minutes, until softened and beginning to brown.
Add the garlic and cook and additional 1 - 2 minutes, until fragrant. Remove to a bowl and set aside.
In the same pan, melt the remaining 2 tablespoons of butter and then add the flour. Cook for 2 minutes, stirring constantly.
Add the beef broth and stir. The sauce should thicken pretty quickly.
Add the salt, pepper, thyme and the cooked mushrooms to the sauce.
Stir in the heavy cream and remove from heat.
Slice the pork and serve with the prepared mushroom sauce.
