We all know about Taco Tuesday. It’s pretty much a staple meal each week at my house. But, I say we start a new trend and add another dish to the weekly meal rotation. How about Fiesta Friday?!

You don’t need a ton of time or effort to add big flavor to your menu. My Fiesta Shrimp recipe is the perfect way to give your family a delicious meal without spending a ton of time in the kitchen. In fact, the actual cook time is a fraction of the time you would spend preheating your oven and cooking that usual frozen pizza so many of us serve on Friday nights.

My dish starts with a flavorful marinade that includes Hellmann’s Mayonnaise, some lime juice, spices and a little jalapeño for some kick. The mayonnaise keeps the shrimp good and moist AND helps ensure all that big flavor sticks so that you get great taste in every bite.

Once you have the marinade prepped, you just let your shrimp bathe in the mixture for a bit, then skewer up with some sweet peppers and onion. A few minutes on the grill and you are in business. Serve with some lime cilantro rice and you have an absolutely amazing meal that is anything but boring. It’s a fiesta of flavor and color. The perfect way to kick off Fiesta Friday!

Fiesta Shrimp

Cook Time 10 minutes
Servings 4

Ingredients
  

  • 1.5 lbs shrimp - peeled and deveined
  • 2 red or green bell peppers - cut into chunks
  • 1 small red onion - cut into chunks

Marinade

  • 1/2 cup Hellmann's Mayonnaise
  • 1/2 jalapeño - seeded and membranes removed then minced
  • 1-1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1-1/2 tbsp fresh lime juice
  • 1 tbsp fresh cilantro - chopped

Instructions
 

  • Add all marinade ingredients to a bowl and whisk to combine.
  • Add the shrimp, cover and refrigerate for 30 minutes.
  • Skewer the marinated shrimp alternating with bell pepper and onion then grill over medium high heat for 3 - 4 minutes per side, until veggies are charred and shrimp is cooked through
  • Serve hot over cilantro lime rice (if desired).
