Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!

I am sure there is no surprise that this week’s meal is Barbecue Chicken Pizza. With the Publix BOGO sale on pizza dough and boneless skinless chicken breast this recipe was a given! My husband and my boys LOVE pizza – big time! I can whip up a pizza dough in no time flat but with the sale I’ll grab a few dough balls myself. I included a pizza dough recipe if you feel like making yours from scratch.

Barbecue Chicken Pizza

Ingredients
  • [b]PIzza Dough Ingredients[/b]
  • 1 Cup + 2 Tablespoons of Water
  • 2 Tablespoons of Oil
  • 3 Cups of Bread Flour
  • 1 Teaspoon of Salt
  • 1 Tablespoons of Sugar
  • 2¼ Teaspoons Active Dry Yeast[br]
  • [b]Pizza Ingredients[/b]
  • 2 cups shredded cooked chicken breast
  • 1/2 cup red onion, sliced thin
  • 1 cup barbecue sauce
  • 2 cups mozzarella cheese, shredded
  • cilantro for garnish
Instructions
[b]Pizza Dough Instructions[/b]
  1. Add the ingredients to your bread machine based on your machine recommendation.
  2. Set for the machine for the dough cycle.
  3. Once the cycle has finished, place the dough in an oiled bowl and cover with plastic wrap.
  4. Allow the dough to rise in a warm spot for around 30 minutes.
  5. Knead the dough and shape to form your pizza crust.
[b]Pizza Assembly[/b]
  1. Preheat oven to 400 degrees. [i]If using a pizza stone, place in oven to preheat.[/i]
  2. Place shaped pizza dough on lightly oiled pizza pan or peel (if you will transfer to a pizza stone)
  3. Spread 1/2 cup of barbecue sauce over pizza dough.
  4. Mix the remaining 1/2 cup of barbecue sauce with the shredded chicken.
  5. Spread the chicken evenly over the pizza and then top with the sliced onion.
  6. Sprinkle the cheese over the top of the chicken and onions.
  7. Place pan in oven (or transfer to pizza stone) and bake for 20 – 25 minutes until crust is brown and cheese is bubbly.
  8. Remove from oven and top with cilantro
