Lemon Cheesecake Mousse with Blueberries on King's Hawaiian English Muffins

  • 4 King's Hawaiian English Muffins, toasted
  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 10 oz lemon curd
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • blueberry syrup
  1. Add the heavy cream to a mixing bowl and whip the cream with an electric mixer until stiff peaks form, set aside.
  2. In another bowl, use the electric mixer to beat the lemon curd and cream cheese until smooth and creamy.
  3. Mix in the powdered sugar and vanilla and gently mix until combined.
  4. Gently fold in the whipped cream until fully incorporated.
  5. Pipe the lemon mousse onto the toasted English Muffins and top with fresh blueberries then drizzle with blueberry syrup.
Store any extra mousse in the refrigerator up to one week.
