Roasted Vegetable Skewers

Ingredients
  • ½ cup cherry tomatoes
  • 3 yellow bell peppers, diced
  • 3 red bell peppers, diced
  • 3 zucchinis, sliced
  • 1 cup baby bella mushrooms,
  • cleaned and stems removed
  • Wooden skewers
  • ½ cup Sir Kensington’s Pepperoncini Italian Vinaigrette
  • Italian Vinaigrette
  • • Quinoa or grain of choice, for serving
Instructions
  1. Add prepped vegetables to a deep baking dish. Pour Sir Kensington’s Italian Pepperoncini Vinaigrette over vegetables until all vegetables are well covered. Cover and let marinate the fridge for 1-2 hours.
  2. Preheat oven to 400°F.
  3. Remove vegetables from marinade. Distribute vegetables evenly amongst skewers.
  4. Roast skewered vegetables for 20–30 minutes or until well browned and tender, turning skewers with tongs every 5–10 minutes to cook evenly.
  5. Serve with quinoa or grain of choice.
