Quick & Easy Rice Salad

Ingredients
  • 1 package Knorr Ready To Heat Chicken & Herbs Flavored Long Grain Rice
  • 1 oz feta, crumbled
  • ¼ cup blueberries
  • ¼ cup dried cranberries
  • ¼ cup arugula
  • 2 tablespoons pepitas
  • 1 green onion, sliced
  • ¼ cup cherry tomatoes, halved or quartered
  • olive oil, if desired
  • salt and pepper to taste
Instructions
  1. Heat the Knorr Rice according to directions.
  2. Add all ingredients to a large bowl and toss to combine.
  3. Drizzle with olive oil if desired and season with salt and pepper to taste.
  4. Serve and enjoy.
