Broccoli Cheese & Rice Soup

Ingredients
  • 1 bag Success® Jasmine Rice
  • 4 cups water
  • 1 tablespoon chicken base (or chicken bouillon)
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 4 tablespoons butter
  • ½ cup flour
  • 3 cups milk
  • 1 cup heavy cream
  • 8 oz cheese, grated
  • 1½ teaspoons pepper
  • 1 teaspoon salt
  • ¼ cup cooked bacon, crumbled
Instructions
  1. Cook the Success® Jasmine Rice according to package instructions. Set aside.
  2. While the rice cooks, place water, chicken base, broccoli, and carrots into a large stockpot and bring to a boil.
  3. Allow veggies to boil for 10 minutes.
  4. While the veggies are cooking, melt the butter in a medium saucepan and cook the onions and celery until softened.
  5. Alternate flour and milk/cream into the butter and onions/celery mixing well between each addition. Allow to cook for 1 - 2 minutes.
  6. Pour the sauce into the water with the boiling veggies.
  7. Stir to combine.
  8. Add the cheese, salt and pepper and cook until thick and creamy.
  9. Stir in the cooked Success® Jasmine Rice.
  10. Serve topped with chopped bacon.
