Meatballs In Creamy Piccata Sauce

  • 1 package Carando Italian Style Abruzzese Meatballs, cooked according to package instructions
  • 1 tablespoon olive oil
  • 2 tablespoon butter
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¼ cup lemon juice
  • 2 oz capers, drained
  • Salt and pepper, to taste
  • Cooked spaghetti noodles
  1. While the meatballs cook, prepare the sauce.
  2. Heat the butter and olive oil in a large skillet.
  3. Once the butter is melted, stir in the flour and cook for once minute.
  4. Add the chicken broth, cream and lemon juice and bring to a simmer.
  5. Allow to simmer for 8 - 10 minutes, until the sauce thickens.
  6. Add the meatballs and allow to simmer an additional 2 - 3 minutes.
  7. Season with salt and pepper, then stir in the capers.
  8. Serve the meatballs and sauce over cooked pasta.
