Pasta with Corn & Sweet Peppers

  • 1 package of Barilla Pasta Ready Rotini, heated according to package directions
  • 1 teaspoon olive oil
  • 1 cup frozen corn kernels
  • 1 sweet bell pepper, chopped
  • ½ sweet onion, chopped
  • ½ cup chicken broth
  • 1 teaspoon corn starch
  • salt & pepper to taste
  1. Heat the olive oil in a skillet over medium high heat.
  2. Add the corn kernels, onion and bell pepper and cook for 2 - 4 minutes until softened.
  3. In a small bowl, mix the chicken broth and corn starch.
  4. Pour the slurry over the veggies and cook for 1 minute.
  5. Add the heated Barilla Ready Pasta and stir to combine.
  6. Season with salt and pepper and serve.
