Five Minute Cilantro Lime Rice

  • 10.6 oz tray of VeeTee Rice, cooked according to package instructions
  • 1 small lime, juiced
  • ⅓ cup cilantro chopped
  • ½ teaspoon olive oil
  • 1½ teaspoons garlic, minced (about 2 small cloves)
  • 2 green onions, chopped
  • ½ teaspoon salt
  • pinch of cumin
  1. Add the oil to a small skillet over medium heat.
  2. Add the garlic and onion and cook for 1 -2 minutes until fragrant.
  3. Remove from heat and stir in rice, cilantro, lime juice, salt and cumin.
  4. Serve warm topped with additional cilantro, if desired.
