I have had lots of folks visiting over the past week or so. When I need to feed a big group of people, I go for things that are easy and won’t keep me stuck in the kitchen all day. Italian Bean Soup With Sausage & Kale on I Heart Publix

Visit the dry bean aisle and look for a couple of new varieties when you shop. New Italian Bean Soup and BBQ Cowboy Beans are the latest addition to the Hurst Bean lineup.  I have had both and they taste incredible. I made a big batch of Italian Bean Soup With Sausage & Kale this past weekend for my family and everyone wanted the recipe. I was loving all the praise and hated to tell them that my recipe was crazy simple. I kinda liked them thinking I was a chef extraordinaire!

Really, anyone can put this meal together in a flash. Just brown some meat, chop some veggies and toss it all in the slow cooker and sit back and let it cook. You’ll have a delicious meal that will feed a crowd with very little effort. Perfect if you have holiday guests visiting.

Italian Bean Soup With Sausage & Kale

Serves: 8 – 10
Ingredients
  • 1 bag Hurst Italian Bean Soup (with seasoning packet) – cleaned and rinsed
  • 1 pound ground hot Italian sausage
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 4 large carrots, sliced
  • 4 celery stalks, sliced
  • 1 large parmesan rind
  • 14.5 oz can of chopped tomatoes
  • 3 cups chicken broth
  • 6 cups water
  • 2 cups chopped kale
  • grated parmesan cheese, if desired
Instructions
  1. Brown the Italian sausage and onion in a skillet over medium heat, crumbling as you stir.
  2. Add the garlic and cook an additional 1 – 2 minutes, until fragrant.
  3. Add the meat mixture to the slow cooker.
  4. Add the Hurst Italian Bean Soup and seasoning packet, the carrots, celery, parmesan rind, tomatoes, broth and water and mix to combine.
  5. Cover and cook on low for 8 hours (high for 5).
  6. minutes before serving stir in the kale, cover and cook until tender.
  7. Serve topped with grated parmesan cheese.

  2. I made this the other day and am addicted to it. Thank you for sharing this recipe. It is very easy to do also. I substituted the kale by spinach as I don’t want to try kale and never have eaten it. To me it’s like eating seaweed even though it is popular and maybe good. Sorry.
    I also added a tsp. of sugar so the soup wouldn’t be sour because of the tomatoes. I do that in my sauce that I make also.
    Everyone should remember to go through all dry beans for rocks or sand to to wash beans in a colander before using.

  3. My daughter made this and I went over her house and tried it. It was sooooo good. She also used spinach instead of kale. She used ground beef instead of the pork hamburg. Even her 2 and 8 year old loved it. I love this soup and it’s so easy to make.

  4. OMG, I am addicted to Hurst beans soups. I tried the cajun flavor one the other day. I don’t like spicy foods but this had a little bit of cajun taste and not spicy at all. I have made this 2 times. I add 1 onion diced, 3-4 stocks of sliced celery, 6 heads of garlic cut up, 1 lb. of carrots sliced and ditalini pasta 1 cup. I put a ham bone in it and when the beans are cooked, I add everything else, and take the ham bone out and cut off all the meat. When the carrots are done, then I add the pasta, cook it for 10 more minutes and shut the fire. I have big soup bowls and I eat 1 and it’s so filling. I love Hurst beans.
