Football season is one of my absolute favorite times of the year. We have a big group of friends who are also big football fanatics so we use the games as an excuse to gather and cheer on our favorite teams. That means we are entertaining almost every single weekend for several months in a row.

I try to vary the game day menu as often as possible, but there are some foods that I end up making almost every single week. One of those foods is jalapeño poppers. I have a couple of recipes that I will make…but my Bacon Wrapped Shrimp-Stuffed Jalapeno Poppers is by far, the most popular of them all.

C’mon…who can pass up a pepper filled with melty cheese and shrimp that’s all wrapped up in delicious Smithfield Bacon YUM!

Besides the amazing taste, I also love that I can prep a big batch of peppers ahead of time and then pop them in the oven when my guest arrive. I’ll often bake them in batches so that we can enjoy that amazing flavor throughout the entire day.

Bacon Wrapped Shrimp-Stuffed Jalapeno Poppers

Serves: 16 – 20 servings
Ingredients
  • 16 – 20 large jalapeños
  • 8 oz cream cheese, softened
  • 16 – 20 slices of Smithfield bacon, cut into halves
  • 1 cup cheddar cheese, shredded
  • 8 oz shrimp, chopped (raw or cooked will work)
Instructions
  1. Preheat oven to 425°F.
  2. In a large bowl, mix cream cheese, cheddar cheese and shrimp.
  3. Cut peppers lengthwise in half; discard seeds. Fill each pepper with a generous portion of the cheese mixture; press lightly into peppers to secure. (Filling should mound slightly above top edges of peppers.)
  4. Wrap half a slice of bacon around each pepper and tuck to secure.
  5. Place on baking sheet or in broiler pan.
  6. Bake 15 – 20 minutes or until peppers are crisp-tender and bacon is browned and crisp.

  1. Does this call for pre-cooked shrimp or aw?

    • Really you can use either…I used raw in the recipe you see. BUT–I hare used cooked in the past 🙂

    Do you cut the peppers completely in half (it looks that way from the picture), or just enough to open them? If so, you’d get 32-40 poppers and need 16-20 pieces of bacon, cut into halves.

    • Tee hee…yes, I was thinking that I cut the bacon in half… so half the number of peppers. DUH–the peppers are cut in half as well.
      When I cook, I don’t really use a recipe. I am an “eyeball” it kind of gal. So the recipe type up is not my forte 😉
