Mediterranean Baked Fish

This is the busiest time of year for most of us. The holidays are wonderful as we get to spend time with friends and family. I try to make the most of my available time each day and also make smart choices when it comes time to feed my family. One of my favorite recipes that I choose when I need a delicious meal that doesn’t require a lot active prep is my Mediterranean Baked Fish recipe. You simply top fish with a little RAGÚ® Homestyle, some onions, olives, capers and then toss it in the oven. Boil up some pasta while it cooks and in about 20 – 30 minutes you have a meal that has amazing flavor!

My family gets a delicious meal and my efforts are minimal…it’s the perfect weeknight dinner!

Mediterranean Baked Fish

Serves: 4
Ingredients
  • 8 oz spaghetti, cooked according to package.
  • 4 – 5oz cod fillets (or your favorite white fish)
  • salt & pepper to taste
  • 1 jar RAGÚ® Thick & Hearty Roasted Garlic
  • 1 small onion, thinly sliced
  • 1 tablespoon capers
  • 12 – 15 Kalamata olives, sliced
  • 2 oz feta, crumbled
  • fresh basil, if desired
Instructions
  1. Preheat oven to 375º F.
  2. Season fish with salt and pepper then place fish in a shallow baking dish.
  3. Top each fillet with 1 heaping tablespoon of RAGÚ® Thick & Hearty Roasted Garlic.
  4. Add sliced onion, capers and Kalamata olives.
  5. Tightly cover the dish with foil and bake for approximately 20 minutes or until fish flakes easily with a fork.
  6. Serve topped with feta and chopped basil.
  7. Add the remainder of the RAGÚ® Thick & Hearty Roasted Garlic sauce to the cooked spaghetti and serve with the fish.
