5075316ee0c24632ae563f1a26189757I have the easiest and most delicious recipe to share with you guys. All four of us had to visit the dentist today and it ran a little longer than I expected. I ran home to get dinner ready while Jim finished up with the boys. I had very little time to get everyone fed before it was time to head out again to take Jeb to football practice.

I noticed some frozen grilled chicken and a bag of the Birdseye Protein Blends Southwest Style and in about 10 minutes I had the most delicious burritos on the table.

You can customize the burritos however you like but the key is the Birds Eye Protein Blends. The Southwest Style is a blend of whole gains, black beans, corn, lentils, red bell pepper and sauce. I didn’t have to add any spices at all! My boys gobbled them up and had no clue that they were eating healthy! It was a hearty meal and took maybe 10 minutes from start to finish.

I know we had some great sales recently and you guys probably have a bunch in your freezer so you might want to think outside the box. While they are great sides, they are fantastic meal starters too!

Quick & Easy Burritos

Ingredients
  • 1 bag Birds Eye Protein Blends Southwest Style, cooked according to package instructions
  • 1 cup cooked chicken, shredded
  • 4 – 6 tortillas, warmed
  • 1 cup cheese, shredded
  • sour cream
  • guacamole
  • lettuce
  • tomatoes
  • salsa
Instructions
  1. Place a little of the Birds Eye veggies, chicken, cheese and any additional toppings in the middle of each warmed tortilla and wrap tightly.
  2. Serve with additional sour cream, guacamole and salsa.
