Here’s my menu for the week. I am still trying to use up what I have in my pantry/fridge this week. The only thing that I actually bought for this week was the swordfish. It made for a delicious birthday dinner – yum!
My husband also took advantage of the weather and put on a Boston Butt roast. We have been trying to cook one a couple of weeks but the weather has not been cooperating. All this rain has killed any hopes of smoking on Big Green Egg. Yesterday we got lucky, so tonight’s dinner is ready to go. I even put together the slaw…so I can serve dinner whenever.
Pulled Pork Sandwich
Oil & Vinegar Coleslaw (Carolina Coleslaw)
Sweet Potato Fries
Chunky Chicken Salad with Orange Yogurt Dressing (linked later this week – Publix Super Meals)
Roasted Butternut Squash
Any leftover veggies that need to be used up
