I love summer! All of my favorite fruits and veggies are starting to hit the stores. I love driving around seeing the gardens and little farms bursting with green. This is the time of year to grab some awesome veggies like sweet onions, zucchini, peas, and CORN!
We go through quite a bit of corn at my house. It's such a great little food that is so versatile. Sweet summer corn is a can't miss food whether you grill it, boil it, cream it or cut it off the cob to use in your recipes. I am not sure I have ever met anyone who doesn't love corn.
Head into Publix and pick up some of the best corn you will ever eat - Amaize Sweet Corn! This is a rare breed of sweet white corn grown in limited supply throughout the United States. It's only available for a couple of weeks and will debut exclusively at Publix in the Georgia market with a little spill over in North Carolina and South Carolina.
On their site, they say that Amaize Sweet Corn is “Best Corn You’ll Ever Eat!” Well, they sent me some of their fabulous corn and you know, I just might have to agree with them. I whipped up one of my husband's favorite meals - Cajun Cornmeal Chicken with Corn and Onions. I used the Amaize Sweet Corn and the dish was fantastic. I removed the corn from the cob and tasted it before I cooked it and it was so good. Sweet, crisp and very flavorful - just perfect!
