Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!

When I saw the deals on Peter Pan Peanut Butter and the BOGO sale on pork chops, I knew exactly what was on the menu this week – Peanut Butter Thai Noodles With Pork!

This is a big hit at my house. It works with all of my guys favorite things. My husband and my 7 year old are peanut butter addicts and my 5 year old is a meat loving  spaghetti-oholic. This meal makes them all happy. I am a bit partial to it as well. Not only is it delicious but it is super simple to throw together.

I got my husband to grill up the pork and I had the noodles prepared while he was working the grill. Besides marinating the meat, I had this one done in less than 20 minutes!

Peanut Butter Thai Noodles With Pork

Ingredients

  • 1/4 cup soy sauce
  • 1 tablespoons sesame oil
  • 1 teaspoon rice wine vinegar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon hot chili oil
  • 1 clove garlic, minced
  • 1 teaspoons fresh ginger, grated or minced
  • 1 tablespoon brown sugar, packed
  • 2 tablespoons cilantro, chopped
  • 1 pound fresh pork chops

  • [u]Noodle Ingredients[/u]
  • 1 pound spaghetti noodles, cooked according to package instructions
  • 1 tablespoon ginger, grated or minced
  • 1/2 cup creamy peanut butter
  • 1/2 cup water
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar, packed
  • 2 teaspoons chili paste
  • 1 teaspoon sesame oil
  • 1/2 cup peanuts, chopped
  • cilantro & green onions for garnish
Instructions
[u]Pork Instructions[/u]
  1. In a bowl (or zip top bag), combine soy sauce, sesame oil, vinegar, lime juice, oil, garlic, ginger, brown sugar and cilantro.
  2. Mix well.
  3. Add pork and toss to coat.
  4. Cover bowl/close bag and allow to marinade in the refrigerator for at least 1 hour.
  5. After 1 hour, remove pork and discard marinade.
  6. Grill pork for 3 – 5 minutes per side (depending on thickness) or until cooked through.
  7. Allow to rest for 5 – 10 minutes before slicing.
[u]Sauce Instructions[/u]
  1. Combine ginger, peanut butter, water, soy sauce, brown sugar, chili paste and sesame oil in a medium microwave safe bowl and mix slightly.
  2. Place bowl in microwave and cook for 45 seconds.
  3. Remove and stir.
  4. Place bowl back in microwave and cook an additional 30 seconds.
  5. Remove and stir until combined…repeat if necessary.
  6. Immediately toss noodles in sauce, add grilled pork and top with chopped peanuts.
  7. Garnish with sliced green onions and cilantro.
Notes
Tip: If the peanut sauce is too thick just add a little warm water and whisk until you get a pourable consistency.
