Hillshire Farm to the rescue. At least that is what I was saying this weekend. You guys know I typically take Saturday off as my day out of the kitchen. Last weekend, we had planned to go to my oldest son's baseball game, run a few errands then hit my favorite Mexican restaurant.
Well, it was so dang cold that the game was canceled and I was not motivated to get out of the house. So, I decided to grab a box of dirty rice mix, slice some Hillshire Farm Smoked Sausage and dinner was on the table in 25 minutes. I really didn't even feel like I was cooking since I just dumped the rice and the sausage in a pan with a little boiling water. My guys loved it and even cleaned up the mess after dinner. Ok...it was only a pan and the four bowls we used but it was still a nice break for me.
I like to have a couple varieties of the sausage on hand. It is one of my favorite meats to keep in the fridge. The sausage I bought last week is good until the end of May. So it will be there ready to go whenever I need it. I don't have to worry about remembering to take anything out of the freezer in the morning. Plus, the price can't be beat especially since we have a great coupon and sale at Publix!

Sausage and White Bean Soup
1 pkg Hillshire Farm sausage diced
1 tsp oil
2 cups of chopped onions
1 garlic clove minced
3 cans of Great Northern beans, rinsed and drained
2 bay leaves
6 cups of chicken broth
1 tsp salt
1 tsp black pepper
dash of cayenne pepper
Saute the onions in oil for 5 minutes. Add in the sausage and brown a little bit on all sides. Add the garlic and cook another minute or so. Add the rest of the ingredients and additional water if needed to cover all the ingredients. Cook, covered, for 2 and 1/2 hours, stirring occasionally. Serve with crusty bread and a salad.
