Reader Spotlight – Stumbling Upon Savings

This week’s Reader Spotlight comes to us from Sharon, who taught herself to coupon after discovering an auction for coupons on Ebay. She has done great since those first steps!

Shortly after getting married I found out I was pregnant, Oh Boy! I decided to quit my good paying full time job and my husband had just started his educational career so our income was cut by 60%! I realized very quickly that I would have to adjust my spending or we’d be broke and homeless in 3 months.

I started selling some of our stuff on eBay to make extra money and stumbled upon an auction for coupons. I started doing research and low and behold, people actually saved tons of money using these things!

I found several blogs, and I Heart Publix quickly became a favorite of mine. I started saving money right away. I took it slow and just shopped Publix for the first month, learning their rules and the stores “coupon quarks.” Then I expanded into CVS, Walgreens, and the other stores in my small town. I recommend that new couponers take their time and learn the system of each store.

We went from spending $400-$500 a month on groceries and household items to spending less than $200 a month on the exact same items. I also have an impressive stock pile that my husband calls our Hutchmart.

I feel like couponing gave me the financial freedom to choose to be a stay at home mom until our son went to school. Those first 5 years of his life were such a joy…He’s now 10 years old and I am in a full time job that I absolutely love. I still coupon and bargain hunt…it’s in my blood forever!

Cheesy Crescent Roll & Chicken Casserole

I have an extremely family friendly meal to share today. This is one of my guys all time favorite things that I make for dinner. Now, I don’t make it too often as it’s definitely not one of the most healthy meals out there. It’s basically just a bunch of cheese, butter, chicken and crescent rolls.

I usually make a really big salad with this one and have everyone load up on the greens in hopes that they don’t overindulge. I should have taken a picture of the pan AFTER dinner. While there are plenty of leftovers…we definitely put a dent in the dish!

I do like this dish as I can make it ahead of time then just toss it in the oven while we are working on homework. It’s a great way to use up any leftover chicken.

This recipe is part of the Publix Menu Plan – Week Of 9/18. Here are the other recipes that I have shared so far –

Ingredients
  • ½ cup + 2 tablespoons heavy cream, divided
  • 1 can cream of chicken soup, 10.5 oz
  • 1½ cups shredded cheddar cheese, divided
  • ½ medium onion, finely chopped
  • 2 cans 8 oz crescent rolls
  • 2 cups cooked chicken, chopped
  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • ¼ teaspoons salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder

Instructions
  1. Preheat oven to 350º F.
  2. In a medium saucepan, add ½ cup of heavy cream, cream of chicken soup and ¾ cup of cheddar cheese.
  3. Cook over medium until the cheese is melted and then set aside.
  4. In a large bowl, add the chopped chicken, ½ cup cheddar cheese, cream cheese, softened butter, salt, pepper, garlic powder and 2 tablespoons of cream then mix until combined.
  5. Butter a large casserole dish and spread a thin layer of prepared sauce in the bottom of the dish.
  6. Unroll the crescent rolls and separate.
  7. Place a large dollop of the chicken filling onto the wide end of the crescent (a heaping tablespoon).
  8. Roll the crescent around the filling (tucking to cover the filling) then place in the prepared casserole dish seam side down.
  9. Repeat this process with all rolls.
  10. Spoon the cheese sauce over each roll and sprinkle with ¼ cup of cheddar cheese.
  11. Bake at 350º for 35 – 40 minutes or until the top is golden brown.
