It’s Friday and that means it time for another Veggie Delights recipe.
Each week Meagan over at Frugal Fun and Fortune brings us a recipe for a delicious meat free dish. This week she has Crispy Tofu Squares for us.
I will admit that I am not a huge fan of tofu. I have a teriyaki tofu sandwich that I make and that is the one and only way I will eat it. I might just have to give Meagan’s recipe a try. Her spice combination sounds delicious – head over and check it out.

Her recipe this week is for Black Bean, Guacamole, & Cabbage Roll. This is just the kind of meal that I could eat every day and never get tired of it.
I am definitely going to make this one. I might try using spring roll wrappers instead of the tortillas – YUM!

You guys know I am a big Mexican food fan. Is there anyone out there who doesn’t like nachos? If you are trying to do more meat free dishes in your weekly menu this is the type of meal where no will will miss the meat!
Ok, it is breakfast time and I am craving nachos. Hopefully my cravings go away or it is going to be a long day!

This sounds so delicious to me. I have to admit that I will need a trip to the spice aisle to make this one. I don’t have any garam masala on hand. I don’t often cook curries but I sure do love them! My spice cabinet needs an overhaul so a little garam masala might have to go on my shopping list!

Megan over at Frugal Fun and Fortune sent over this week’s Veggie Delights recipe. I have to admit when I read the title it didn’t jump out as me as something to try but then I read the ingredients and the recipe and I changed my tune!
This week she has Baked Bean Cornbread Casserole on the menu. You guys have to go check out the recipe. I am thinking this would be a fabulous way to use up beans from the crockpot! I may give it a try when I make white beans next!

I love that this is filled with all the Mexican flavors that I love but also contains a wealth of nutritious veggies! I am definitely putting this one on my menu next week!
