I think fried rice is a great transition dish for anyone looking to do meat free dishes for their family. I honestly don’t think most folks would miss the meat!

You guys have to go visit Meagan…she has revamped her website and is now Joyful Simplicity. I love it almost as much as I love this week’s Veggie Delights recipe.
This week Meagan cooked up some Hurst Family Harvest beans and ended up with a fantastic recipe for Split Pea Soup. You guys know I am a huge fan of dried beans and love that Meagan chose to add carrots, spinach and mushroom to her Split Pea soup recipe. I have always done a very basic split pea soup and can’t wait to try something new.

One thing I don’t make too often here is curry. I love a good curry but my guys…not so much. There are a few recipes that I have to save and do as a lunch option. I am thinking Meagan’s Creamy Curry may be a perfect option!

I will admit that I am not a huge fan of tofu. I have a teriyaki tofu sandwich that I make and that is the one and only way I will eat it. I might just have to give Meagan’s recipe a try. Her spice combination sounds delicious – head over and check it out.

Her recipe this week is for Black Bean, Guacamole, & Cabbage Roll. This is just the kind of meal that I could eat every day and never get tired of it.
I am definitely going to make this one. I might try using spring roll wrappers instead of the tortillas – YUM!
