I love salads because they are so versatile. My oldest son is also a big salad fan. He loves them so much that we’ll often share an entree salad when we go out to eat. My children are complete opposites so of course my little one will not touch a salad at all. I just can’t give up – who can pass up a delicious salad?! I am going to continue putting it on his plate and keep my fingers crossed that one day he will give it a try and realize what he is missing – tee hee!

When I was growing up we always had black-eyed peas and greens as part of our New Year’s Day dinner. My mom said that by doing so, we’d have luck for the new year.

My husband loves my black bean dip. It is just a requirement that guys love dips?? I made some a few weeks ago. Instead of using the canned beans. I just pulled some of the Hurst Family Harvest beans that I had made for dinner the night before and voila…a delicious dip!
Amanda’s recipe is a little different than mine, so I may have to try hers as well…I am sure my husband wouldn’t mind
