Amanda commented that she was not a huge fan of zucchini. She changed her tune after making these. I think I might need to send her over a few more recipes! Zucchini is FABULOUS and so versatile. I use it all the time –many times I even grate it up and hide in various recipes to get a little extra nutrition in my guys.

A good zucchini cake with a marinara is a thing of joy. I typically use a Parmesan or a Romano as my cheese of choice…you can even add a sprinkle of nutmeg to take these babies to another level of fabulous.

These would be a fabulous option for a meat free dinner…they are very hearty (and did I mention – delicious??) I think I might have to make them this week as an extra side dish!

I can’t wait for these to start showing up in my produce box. After seeing Amanda recipe over at A Few Short Cuts, I might not be able to wait!

My grandpa always put his breading mix in a brown paper bag. He’d throw the okra in the bag to coat and then fry up a big batch. I still do mine the same way.

I am a huge fan of the Lettuce Wraps at Cheesecake Factory. I rarely get to have it because the closest restaurant is over 45 minutes away. Usually about once or twice a year we will happen to be in that particular area and I get to indulge. Their menu is huge but I never even bother to go past the appetizers. We usually get the Lettuce Wraps and Avocado Egg rolls to share. Their appetizers are so large that there is no way you can do them plus a meal if you plan on having a piece of cheesecake. AND…how can you not have a piece of cheesecake when you are there?!

Ok…now that I am craving Lettuce Wraps. Head over and check out Amanda’s recipe. If you have some time and lots of ingredients you can try the copycat version of the Cheesecake Factory’s wraps. It’s not exact but it’s pretty dang good.

Bacon Cheddar Cornbread – Tide You Over Tuesday

I get requests all the time from my guys to whip up a pan. It is very rare that I make just a plain cornbread. I love to jazz it up and add all kinds of good stuff. One of our favorites uses cottage cheese and broccoli…before you turn your nose up you have to try it – it is fantastic!

Amanda over at A Few Short Cuts has a version for you to try – Bacon Cheddar Cornbread. I make a very similar version and add corn niblets and some sauteed onions – it is a meal all on it’s own – yum!

Next time you think about whipping up some cornbread, get creative. You really can’t go wrong.
