Amanda over at A Few Short Cuts has a nifty “Snack”urday recipe for us this weekend – Key Lime Pound Cake.
I have to admit I am not a huge fan of pound cakes. Maybe it’s because I have never found a recipe that I like. Everyone I have tried usually comes out dry and just way too dense.
I have a fondness for lime, so I will admit this one has me a little interested. I am thinking a cherry icing might be a nice combination.

Easter Jell-O Eggs – “Snack”urday

Amanda over at A Few Short Cuts has a great “Snack”urday treat that would be a great way to get the kids egg-cited about Easter.
I think I heave mentioned that have a slight addiction to pans and molds. It is just more fun to serve food that is festive. Amanda put together Jello-O Eggs – they are super cute. She mentions that a few of her eggs stuck to the mold. I’ll give you guys a tip when working with Jell-O and molds…a quick spritz of cooking spray works like a charm. I usually do one mist over my mold and then use a paper towel to wipe up any big drops of oil. You just need a light coat and your item will come out lickity split. Because you use so little you don’t taste the cooking spray at all, but your creations look great!
Another couple of tips…
- If you are making a big mold, you will need to use less water than called for in the basic Jell-O recipe. This will help your mold keep it shape.
- Also, if you want to make a layer of different colors – let each color set before you add the next color. It takes a little more time but will turn out much better!
I think I might whip out a mold (or two) today. I am feeling inspired!

Homemade Oatmeal Cream Pies – “Snack”urday Treat

Oh boy…I have a feeling I am going to have to make the new “Snack”urday treat that Amanda shared today – Homemade Oatmeal Cream Pies.
My husband has a thing for Little Debbie snacks. I don’t buy them for him because he can demolish a box in no time flat. Now, when we go on road trips like we did last week. He makes any excuse he can to stop at a gas station and get an Oatmeal Creme Pie or a Nutty Bar. Often he ends up with one of each!
I’ve never understood his addiction to the Oatmeal Creme Pie…a squished cookie with cream filling is not my idea of the perfect treat. I am a Swiss Roll gal myself -tee hee!
I am going to look to see if I have any marshmallow cream in my pantry. If so I will be making these for him tonight. If not I may see if he wants to take a detour to Publix after Jake’s game and grab a jar. What do you want to bet, he will be willing to stop?!

We are going to be traveling home today but that baby might be calling my name for tomorrow. I actually like the combination of cherry and lime. I think a little lime juice added to the cake plus a little lemon zest in the frosting sounds like heaven!
