I decided to bring in a few favorites that I haven’t made in a while as well as some new recipes. Maybe I’ll find some new favorites to add to my go to list!
Here is what is on my menu for this week:
Turkey Tetrazzini & Salad (Yummy–I made this tonight)
Broccoli Cheese Soup
Spanish Rice Dinner , Spinach salad
Cheese Stuffed Meatloaf, Green Bean Casserole, Mac & Cheese
Chicken Castoletta, Mashed Potatoes, Squash & Onions
Chili Over Rice & Crescent Rolls

Ok –I had an excuse last week not to do my Meal Plan Monday post–but no excuse this week. So in an effort to get back on track I am doing a late edition of Meal Plan Monday
This week I am doing the following:
Shaunta’s Swiss Cheese Chicken (HERE in the comments section) Broccoli and Garbanzo Beans
Stuffed Pizza Rolls and Salad
A Few Short Cuts Rubbed Down Slow Cooked Chicken Rice and Mixed Veggies
Peach Chicken Baked Sweet Potatoes and Peas
Spaghetti & Turkey Meatballs
Chicken & Dumplings or Chicken Parmesan (both are from Amanda’s site A Few Short Cuts it will depend on the weather)

Here is my menu plan for the week. Last week I couldn’t pass up a couple of Ribeye steaks so the cabbage rolls that I had planned for last week will move to this week. I am looking for some new recipes so if you have any good ones let me know or leave a comment with a link. I am attempting a new version of chicken parm…but I really need some yummy new dishes to try!!
Crockpot Roast (roast, potatoes, carrots, onion) and Lima Beans
Stuffed Cabbage Rolls & Salad
Spinach & Feta Stuffed Chicken, Broccoli, Corn
Turkey Salisbury Steak, Mashed Potatoes, Mixed Veggies
Chicken Parmesan over Angel Hair Pasta
Jambalaya (the kids will have fish sticks as I make a spicy Jambalaya!)

I hope every one has had a restful Labor Day! I had intended to try a few new recipes this week but never had the chance to look for them. Since I did my shopping this morning –I went with a few dishes that I have not made in a while. I am determined to find some new things to make! I tried a new recipe last week and it was a huge hit (Bacon Wrapped Teriyaki Chicken– HERE). I’d love to hear some of your favorites–If you’d like to share! For those of you who have emailed/commented wanting copies of my recipes–I have not forgotten you. I hope to have them typed up and will stick up a link very soon!

Here is to hoping that this week is calm and uneventful! I need a restful week after the past couple of weeks
Here is what I have planned for dinner this week.
Beef Stroganoff, Garlic Bread
Chicken & Rice (lots of veggies hidden in this one

Garlic Chicken Thighs, Rosemary potatoes, fresh lady peas (thanks to my mom!)
Pork Roast, Broccoli, Cream Corn
Feta Stuffed Chicken Burgers, Sweet Potato Fries
Bacon Wrapped Teriyaki Chicken HERE, Steamed Rice, Veggie Stir Fry
I found the Bacon Wrapped Teriyaki Chicen while perusing the Orgjunkie Meal Plan Monday links. I have lots of free bacon thanks to that $3/1 Smithfield coupon…so this sounded like a great way to put it to use! I’d love to hear what you guys have on the menu this week.
Menu Plan Monday…Just A Little Late

We have had so much going on here at my house the last week or so that I am just a few steps behind. I was at the Allergist all morning with my 3 year old. Poor thing had to endure a skin test that included 24 little shots…when you are 3 there is no such thing as a “little” shot
All of that just to tell us that he is allergic to stinging insects…um, yeah I knew that!! My 2 year old is just a wild child–we are working to add Occupational Therapy to see if we can get some of his sensory issues in check. So–we have been to various doctor and specialist appointments galore in the past few days. Those appointments have also required numerous calls and lots of time spent on the phone…so hopefully you guys can bear with me as I try to get everything back on track
With all of that said–Menu Plan Monday is just a little late.
This week I am doing the following for dinner:
Homemade Fajitas
Meatloaf, Mashed Potatoes, Green Bean Casserole
Ham-Go-Round, Salad
Spaghetti & Meatballs, Garlic Bread
Lasagna Rollups–I make them with Chicken and a Bechamel sauce–YUMMY!
Grilled Marinated Pork Steaks, squash casserole, rice side, broccoli

Turkey Salisbury Steak with Mushroom & Onions, Mashed Potatoes, Corn Casserole
Swiss Cheese Chicken (thanks to Shaunta for the recipe), Acorn Squash, Steamed Broccoli

I really feel like I am in a cooking rut…I tell myself that I am going to try a few new dishes every week. I have great intentions but I have yet to search out new recipes. SO–I decided that I have to make a change in my routine to make it happen. I decided to join the Meal Plan Monday hosted by oganizationjunkie.org. I have been clicking on various links and already have several new ideas! So–here is my menu for this week:
Breakfast:
Waffles & Fruit
Scrambled Eggs & Toast
Cereal & Yogurt
French Toast
Bagels & Laughing Cow Cheese
Lunches:
We usually do leftovers, PB&J or sandwiches
Dinners:
BBQ Pork Sandwiches
Turkey Meatloaf, Mashed Potatoes & Peas
Crockpot Lasagna
Grilled Pork Chops, Corn, Lima Beans & Squash Casserole
Crockpot Chicken & Rice with Broccoli
Marinated Baked Chicken, Butternut Squash, Shells & Cheese, Green Beans
I have pretty much everything on hand to cover this menu. I’d LOVE for you all to email me any great, kid friendly meals that you have (or leave it in the comment section!!) I need a good meal to use some Swiss Cheese that expires in the next two weeks if anyone has any ideas!
