Meal Plan Monday

It has been a couple of week since I posted my meal plan. So many of you are curious how I make my meals and often ask how on earth I make meals from my shopping list. SO…I am going to try my best to get it added each Monday. I actually like forcing myself to do it since it helps so much with my shopping list!!
Here is what I have planned this week:
Balsamic Chicken with Sauteed Spinach and Mushrooms, Field Peas & Mashed Potatoes (taters for the boys as they are not yet quite fans of spinach
) –Let me just tell you…this was a FABULOUS recipe. I could drink that sauce– it was so good!! I think I need Susan to give me a new recipe every day!! YUM!!
Asian Grilled Pork Tenderloin with Pineapple, Fried Okra, Fruited Rice
Grilled BBQ Chicken, Corn Casserole, Green Beans
Shepherds Pie & Corn Muffins
Sweet & Sour Turkey Meatballs with Broccoli & Onions over Rice
Grilled Hot Dogs, Taco Night or Pizza Night–it will depend on my mood

My husband is home this week. I would love to say that we are headed to a tropical locale but that will not happening. We are trying to tie up some loose ends with our basement renovation and hoping to get about a million other to do’s done…so it is not quite a vacation. Since I will be able to control dinner time a bit better this week I let him choose the menu (well except tonight’s meal…that was my choice!!) So this is what my husband requested this week…I think you will be able to tell this is a man’s menu
Carne Asada and Cilantro Lime Corn & homemade guacamole UPDATE–This was a FABULOUS meal!
Barbecue Ribs, Potato Salad & Coleslaw
Grilled Blue Cheese Stuffed Burgers & grilled veggies
Hot Wings & Home Fries (I will have to throw another veggie in to make me feel better)
Homemade Pizza & salad
Grilled Hot Dogs, Coleslaw (vinegar based to use the other half of the cabbage) & Baked Beans

I can’t believe I remembered…I think it is because I am still thinking about how good Susan’s Spaghetti alla Carbonara was. It sounded so good that I just had to make it for dinner tonight!! Mine turned out really good and my whole family thought it was great!! I did add about a cup of grilled chicken to the recipe and next time I will use a tad bit more pasta water! You guys have got to try it!
Jake has soccer practice tomorrow night so I am going to attempt to cook my cabbage rolls in the crockpot! If it is a flop we will have sandwiches
So here is what I have planned for this week:
Spaghetti alla Carbonara, french bread, salad
Cabbage Rolls (made with turkey & lots of veggies hidden in this one so it is a full meal by itself)
Hunan Chicken, Steamed Rice, Broccoli
Tilapia, Mac & Cheese, Green Beans
Barbeque Chicken, Baked Beans, Corn
Shepherd’s Pie, spinach salad

As I was making my grocery list last night I asked my husband to give me some dinner ideas for the week. I am not sure if I am excited about his choices or not
While they are fairly easy to cook…I could not really find coupon matches-hahaha!!
I am minus one dish this week!! I need some suggestions…so I thought it would be fun to make it worth your effort!! I am looking for a good chicken recipe!! I have a ton of boneless skinless chicken in my freezer and I am out of ideas. Leave your favorite chicken recipe here in the comments section on this post on I Heart Publix!! Please do not email it to me or leave it on the Facebook page. On Friday night I am going to have my husband read through all the recipes and choose his favorite. The winner will get a $50 Amazon gift card to spend as they wish!!
Remember the only requirements are chicken recipe, posted in the comments section by Friday 7/9 at 11pm! My hubbie will choose his favorite and I will make it on Sunday!!

Well once again my husband called from work and kinda messed with my menu for the week
He called me this afternoon wanting to know if I wanted to go look at new vehicles…
There are perks to living in the boonies and there are also big disadvantages!! Once of the biggest problems is that my husband has to drive almost 90 miles each day to get to and from work! He was driving a gas guzzling truck each day that required a fill up every four days. So we decided to get him a new hybrid! With the hybrid we will save massive money on gas expenses and it will allow us to keep the truck in good condition so we will have it when we need it for hauling things!
Since we had the kids out a bit later than normal we decided to stop and grab dinner on the way home from the car dealership…so my menu has already been modified
Here is what I have planned for the rest of the week:
Mexican Lasagna & homemade guacamole
Baked Whole Chicken, Macaroni & Cheese (I finally found the new Kraft Homestyle Mac & Cheese), Sauteed Zucchini
Marinated Grilled Pork Steaks, Grilled Veggies, Mashed Potatoes
Swiss Chicken & Stuffing, Lima Beans
Stuffed Turkey Burgers on Flat Bread, Baked Beans, veggie of some sort
Homemade Pizza

I had to giggle a bit as I got an email last week from someone who insisted that because my weekly totals are so low that I must not ever cook at home!! Some days I wish I did not have to spend so much time in the kitchen!!
Believe it or not we eat at home most every meal! I will admit that not every meal is a gourmet experience but I do try to vary our dinners to avoid monotony!! What you see on my weekly list may not be used for quite a while! I have enough on hand so that I could easily go without shopping for several weeks! I find it is easier to stay on budget by creating my menu based on the sale and what I have on hand. Each week I try to add a little to my inventory so that I can continue to keep the meals as varied as possible.
This week is a small list as I will get a break from the kitchen as we are going to go out of town for a few days…so I only had to plan for Monday through Thursday.

Spinach & Feta Stuffed Chicken, Mashed Potatoes, Lima Beans
Peach Chicken, Rice, Squash Casserole & Green Beans

Well I had my menu figured out or so I thought…my husband called from work today and said he wanted to meet out to look at new area rugs and then go out for Sushi!! There was no way I was going to turn him down
So I will just shift my meals a bit!!

I hope you are all having a wonderful Memorial Day!! We have enjoyed the day by cooking out, relaxing and watching movies in our “soon to be completed” basement! Wouldn’t you know the first room to be completed is the theater/man cave. Tee hee–I can’t complain as it is nice to just veg in front of a movie every now and again!!
Well another perk of the day is that my husband was home and I was able to shop all by myself this morning!! It was such a treat but I tell you I might be better off with the boys. It was so nice to shop alone–I strolled around the store and actually had a chance to look around a little bit. When I have the boys I try hard to get my items and get out as quickly as possible to avoid any major meltdowns. While looking around I saw a couple of ribeye steaks and just couldn’t help myself…I actually bought several things that were not on my list!!
I totally blew my budget but you know it was worth it
I still think my savings percentage will be pretty good this week!! Here is what I am planning this week:
BBQ Ribs, Potato Salad & Baked Beans
Grilled Ribeye, Squash Casserole & Fried Okra
Fried Chicken, Mashed Potatoes & Steamed Veggies (my husband’s request this week)
Baked Ziti
Homemade Chicken Pot Pie

I usually have my menu ready by Monday since I shop on Monday morning but I just could not get motivated to make my grocery list this morning so I will be headed to the store tomorrow. I asked my husband for any requests…after a few minutes of pleading for an idea he finally came up with hamburgers! Yes–he is super easy to please
Here is what I have planned this week:
-Grilled burgers & homemade fries
-Chicken Scallopini
-Meatballs (either Swedish or Sweet & Sour–it will depend on my mood
) rice & veggies
-Stuffed Cod, Corn, Broccoli & Cauliflower
-Baked Spaghetti
-Homemade Chicken Pot Pie
