I am a huge fan of Thai food. It is packed with flavor and often many of the recipes are quite simple to put together. Susan over at Our Family Eats has a perfect example of this in her Thai Noodle Bowl with Chicken.

This one requires only 5 ingredients and just a few minutes to prepare. This would be an awesome recipe to whip up for dinner or even at the beginning of the week to munch on all week for lunch!

This one is also super economical….my kind of recipe!

I love that Susan shares the best way to cook a steak on the stove – use a cast iron skillet! Now, I prefer a steak on the grill but there have been the occasional times where either weather or an empty propane tank have spoiled my grilling plans. When that has happened I will whip out my big cast iron skillet and dinner is saved!

I have not made crepes in forever. Seriously it has been a year or more. How could I forget about these fantastic gems? They are super easy and you can fill them with whatever you like. Whether you want something sweet or savory, crepes are an easy way to put together a meal your crew will love.

Pasta Sauce is one of those things that most folks never take the time to make from scratch. I will admit that a jar of Bertolli is often my go to option when I need dinner on the table quickly. If you have ever had a batch of home made pasta sauce you may re-think the jar.

What I love best is that you can customize it based on your family’s preferences. Also, homemade sauce is a fantastic way to sneak in all kinds of veggies without anyone ever noticing!

Corn Dog Muffins – Big Taste Small Budget Recipe

I have to say that I am really excited to try this one. My oldest has major love for corn dogs. The rest of us …not so much. I have always contemplated trying my hand at homemade corn dogs but just never got around to it.

I read through Susan’s recipe and it is super easy. I think I am going to modify it slightly and do mini muffins. I think a hot dog slice in a little mini muffin pan would be the perfect little bite. The best part is that I can do a bunch then freeze them so when Jake requests corn dogs, I can pull out a few and throw them in the toaster oven to heat up and serve.

The weather was absolutely beautiful this past weekend in Atlanta. I really hope that the warm weather will settle in soon for good. With weather like we had this weekend, I look for light and simple meals like Susan’s salad. The fantastic thing about pasta salads is that you can mix them up based on your family favorites.

My guys would prefer a vinaigrette instead of yogurt and I would probably also toss in some feta and cucumber – oh man…my mouth is watering!
