The weather is starting to cool off a bit and boy oh boy I am craving some comfort foods. When I looked through the ad this week, nothing was jumping out at me. Then I noticed the sale on potatoes and I instantly thought…Loaded Potato Soup!

This is a super easy recipe and only a slight variation of the one I ate all the time as a little girl. Potato soup night was one of my all time favorite meals. I adjusted my mom’s recipe by adding chicken broth.While my mom uses only milk in her recipe, I like the richness that half and half adds to the soup. To really kick this one up, serve it in a bread bowl – your family will come running!

By the way…with just a few modifications you have a rocking Broccoli Cheese soup too. I will have to share that one another day!

Loaded Potato Soup

Ingredients
  • 3 cups potatoes, peeled and diced
  • 1 3/4 cups chicken broth
  • 1 3/4 cups water
  • 1/4 cup celery, sliced
  • 1/2 cup onion, chopped
  • 1/4 cup carrot, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 5 tablespoons butter
  • 5 tablespoons flour
  • 1 cup milk
  • 1 cup half & half
  • Farmland bacon, cooked crisp and crumbled
  • green onions, sliced
  • cheddar cheese, grated
  • sour cream
Instructions
  1. Place potatoes, carrots, onion, celery, water and chicken broth in a large pot. Bring to a boil then cook over medium high heat for 10 – 15 minutes…just until potatoes are fork tender.
  2. Melt butter in a separate sauce pan.
  3. Whisk flour into melted butter and cook 2 minutes.
  4. Slowly whisk milk and half and half into the roux.
  5. Continue cooking about 5 minutes until the sauce is thickened.
  6. Pour the sauce into the pot with the potatoes and other vegetables.
  7. Add salt and pepper and stir until combined.
  8. Cook the soup for 5 minutes then serve topped with cheese, Farmland bacon crumbles, green onions and sour cream (if desired).

Grab a few items from the Publix sale and pair that with some pantry items and you can whip up a fantastic soup. This is a very economical meal that your family will love!
