Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!

Well we know that the current Publix ad  is filled with awesome deals on all the fixings for a Thanksgiving dinner. Since many of us will soon be spending a good day (or more) to whip up those large meals, I thought I’d share a simple recipe that you can whip up with ease – Shepherd’s Pie.

Shepherd’s Pie is one of those great “go to” meals where you can grab the items you have on hand and then have a casserole on the table in about 30 minutes. You can always substitute with things you have in your pantry and it still comes out delicious. Now you will notice that I also labeled this as Cottage Pie. I think technically my recipe is a Cottage Pie recipe as I make mine with ground beef. A true Shepherd’s Pie is made with lamb. But since most of us likely know this as a Shepherd’s Pie…I will leave it up to you what you call it…my guys call it delicious 😉

This is a great recipe to prepare ahead of time. You can get everything assembled then just toss it in the oven about 30 minutes before you are ready to eat. As you can see by my picture, I do individual servings. I can usually get 6 hearty servings from the recipe below. Four are dinner for us and the other two get saved for later. I’ll give you another tip…freeze the meal in your ceramic dish. Once it is frozen, slide a butter knife around the edges and pop out the entire frozen meal and then just wrap it by itself. When you want to eat it, pop the frozen meal back into your ramekin, defrost in the fridge and then heat. That way you still have access to your bakeware and save a little space in your freezer too.

Shepherd’s Pie (or Cottage Pie)

Ingredients
  • 1 1/2 – 2 pounds potatoes, chopped
  • 1/2 cup half & half
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 tablespoon oil (canola or vegetable)
  • 1 large onion, chopped
  • 2 – 3 carrots, chopped (approx 1/3 cup)
  • 1 – 2 celery, chopped
  • 1 tablespoon garlic, chopped
  • 1 1/2 pounds lean ground beef
  • 3 tablespoons flour
  • 1 cup chicken broth (or beef broth)
  • 1/2 cup beer [i](I used Samuel Adams Octoberfest in my recipe – a nice flavorful beer is best)[/i]
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon tomato sauce
  • 1 tablespoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon dried rosemary
  • 1/2 cup frozen peas
Instructions
  1. Preheat oven to 400 degrees.
  2. Boil potatoes. For added flavor boil in half water and half chicken broth.
  3. Drain and mix with half & half, milk, butter and 1 teaspoon salt. [i]I use a ricer to get a smooth texture…but a mixer will work great too![/i]
  4. Add additional milk as needed to get to desired consistency.
  5. Heat oil in a large sauté pan.
  6. Add onions, celery and carrots and cook 2 – 3 minutes until the onions are translucent.
  7. Add garlic and cook 1 -2 additional minutes.
  8. Add lean ground beef to pan and cook until browned.
  9. Sprinkle flour over meat mixture and stir well, cook for 2 minutes.
  10. Add chicken broth, beer, Worcestershire sauce, tomato sauce, 1 tablespoon salt, pepper, rosemary and peas. Stir to combine.
  11. Cover with lid and cook for 5 minutes until thickened.
  12. Place meat mixture into 3 quart casserole dish (or 6 individual ramekins)
  13. Spread or pipe mashed potatoes onto the top of the meat mixture.
  14. Bake in 400 degree oven for 20 minutes until the potatoes begin to brown.
Notes
[i]If you pipe the potatoes, you might brush the top of the potatoes with a little egg wash to help achieve a nice browning.[/i]
