Last night, I made a big batch of Red Beans and Rice using a package of Hillshire Farms Beef Sausage and my guys devoured it! My oldest had a Cub Scout field trip so I needed dinner on the table lickity split. I grabbed a boxed mix of red beans & rice, sauteed some onions and bell peppers with my Hillshire Farm Sausage and dinner was on the table in less than 30 minutes!

8 oz. thinly sliced Hillshire Sausage
2 cups cooked pasta bowties
1 cup kernel corn – drained
1 cup mixed pepper strips, frozen – drained
1 cup fat free milk
2 large eggs, beaten
1/4 tsp salt
1/4 tsp black pepper
3/4 low fat shredded mexican blended cheese.
Preheat oven to 350F. Spray medium baking dish with cooking spray. Place pasta, then vegetables in dish. Mix together milk, eggs, salt, pepper and 1/4 cup of cheese. Pour over pasta and veggies. Place thinly sliced sausage on top. Bake for 30 minutes…add remainder of cheese and bake an additional 15 minutes or until bubbly and cheese light brown. Makes six servings of YUMMY!!
