I made the Hurst split pea soup on the fly this week!
My husband pulled the ole it’s 9pm and I need to bring in a dish for the potluck tomorrow, that starts at 6am at his work! After a few nasty words I told him I would come up with something and sent him to bed, but boy would he owe me! I opened my pantry and saw some Hurst beans, opened my fridge and saw that glorious ham end/ bone that was leftover from a party. In less than 5 minutes I had some Hurst Spilt Pea soup going in the Crockpot. Pulled some homemade bacon cheddar biscuits I keep in my freezer and was done. Of course I slept on the couch for a few hours so he would think I slaved over this meal, hehe! Tons of compliments and emails asking for the recipe. Hurst beans make looking like a superstar at any get together super easy!

we love tri-bean soup! theis a german dish!
1/2 lb white beans, soaked overnight in water to cover
    8 cups water
1/2 cup cubed bacon or 1/2 cup country ham
1/4 lb green beans, cut into bite-sized pieces
1/2 celery root, peeled and cut into bite-sized cubes (if you can’t find celeriac, use 2 stalks of celery, cut into cubes)
    1 carrot, peeled and cubed
1/2 leek, sliced into thin rings
    1 onion, roughly chopped
1 parsley root, cubed (or 1/2 cup chopped parsley)
1/2 lb small red potato, unpeeled and cubed
1 tablespoon marjoram, crumbled between your palms
1 teaspoon thyme, crumbled between your palms
    2 bay leaves
    1/2 cup parsley, chopped
    1 tablespoon butter
    1 tablespoon flour
    salt and pepper
    Directions:
Drain the soaked beans, then put in a kettle with 8 cups of water and the bacon.
Bring to a boil over medium heat, then reduce heat, cover, and simmer for an hour.
Add the green beans, celery root cubes, carrots, leeks, onion, parsley root (or parsley), potatoes, marjoram, thyme, and bay leaves.
Bring back to a boil, reduce heat, and simmer for another hour.
While the soup is cooking, melt the butter over low heat in a saucepan.
Stir in the flour and let it brown very very slowly, stirring occasionally, this could take an hour, if you keep the heat low enough.
When ready, stir in a little of the soup stock, whisk for a minute, then stir into the soup kettle.
Season with salt and pepper and cook uncovered, stirring from time to time, for 10 minutes.
When ready to serve, stir in the parsley, remove the bay leaves, adjust the seasoning, then ladle into soup bowls and serve immediately.

My 10 year old loves beans, any kind. I asked her if she would like to try a bean soup and she had excitement in her voice as she said yes. I am looking forward to trying the Tri Bean soup. She also loves cornbread and I have to have it also. Now that the days are starting to get cooler here in the south, wow this is going to be bliss.

  322. Michelle says:

Our family makes a one skillet meal we call Tallerina – no idea if it’s original or if my Grandma found the recipe somewhere. But we all tinker with the ingredients to make it our own. I’m going to try adding the Hurst Chipotle Lime Black Beans the next time I make it.

    Right now my version uses:
1 lb. ground sausage, can of diced tomatoes, can of corn, Ditalini pasta, and shredded cheese – specifically Kraft with a Touch of Philly, whichever variety I have on hand.

Grandma’s recipe calls for ground hamburger, stewed tomatoes, corn, egg noodles and slices of American cheese.

Adding the black beans will increase the stick-to-your-ribs value we strive for. It’s pretty much homemade Hamburger Helper, but hey, we like it! :-)

I will be combining the black bean soup and the tri-bean soup to make a taco soup. Add 1 lb. of browned and drained ground beef, 1can of corn, 3 packs of reduced-sodium taco seasoning and 1 pack of dry ranch dressing mix. Add water until reaches soup consistency and simmer until done. I usually put my soup up over night so the flavors can combine and become even tastier. It is a filling, warm soup and that can be served with corn bread, tortilla chips, or crackers. When we have some left over I freeze it and when we want a good dip for tortilla chips I usually cook it until it has thickened.
